Mushrooms are a wonderful, high-value, healthy, nutritious and medicinal food to grow in both urban and rural environments, and can be incorporated into many existing growing systems. Learn how to grow oyster mushrooms year-round on straw, coffee grounds, and other media using low-tech methods.

Full Course Description:

Mushrooms are a wonderful, high-value, healthy, nutritious and medicinal food to grow in both urban and rural environments, and can be incorporated into many existing growing systems. Learn how to grow oyster mushrooms year-round on straw, coffee grounds, and other media using low-tech methods. You'll get hands-on experience pasteurizing and inoculating substrate in different kinds of cropping containers. Participants will take a small bag of inoculated substrate home to fruit.

We'll cover:

  • Life cycle of mushrooms and cultivation basics
  • How to inoculate, fruit, and harvest oyster mushrooms
  • Year-round cultivation; urban and rural applications
  • Recycling, composting, and vermicomposting with mushrooms
  • Post-harvest handling and marketing


Learning Objectives:

1) Learn how to inoculate, fruit, and harvest oyster mushrooms

2) Gain hands on experience in order to build confidence in cultivating mushrooms

3) Spark curiosity and interest in incorporating mushroom cultivation into urban and rural farm/community project settings, using regenerative, low-tech, low-cost methods.

Instructor Bio:

Ashley is an activist farmer, social justice organizer, radical mycologist, artist, student, and teacher. Ashley is passionate about applying ecological principles to transformative social ecologies and creating resilient communities through regenerative agriculture, food systems, and mycology. Ashley has practiced regenerative agriculture and mycology across the country, including managing a bio-intensive greenhouse at Stone Barns Center for Food and Agriculture, practicing agroforestry and medicinal plant cultivation in the Catskills, managing a start-up aquaponics farm, and working with urban and rural farming projects in New York and the Midwest. Ashley is currently based in Minneapolis, MN and is dream scheming a community mycology lab.
